Unfortunately, once messages are deleted on Instagram, they can't be recovered through the app itself. However, you can try downloading your Instagram data (via Settings > Your Activity > Download Your Information) to check if the messages appear in the archive. Keep in mind, though, that deleted messages are usually permanently removed.
