Does Instagram notify users when you takes a screenshot of someone story? And if so, how does it work—does it apply to all types of stories, or are there exceptions?

Nope! Instagram won’t notify anyone if you screenshot their story.

There is none of the notifications were sent, if you take a screenshot of someone else story or a profile. However, this feature was tested by Instagram in 2018 to notify users of story screenshots, but later on, it was removed.
