Hey everyone! I noticed that some people have colorful Instagram Notes, but mine always stay the same plain color. I've looked around but couldn’t figure out how to change the color. Does anyone know how this works or if it depends on something specific? I'd appreciate any help or tips you can share.

Gold:
Including keywords related to the Olympics, such as "Gold," "Olympian," "Victory," "Medal, etc., will make the note gold in color.

Instagram Notes are not based on a manual change of color. The instagram automatically assigns the color and can change depending on the account, theme, or version of the app. Keep your app up to date users can not directly control the note color to view new styles/colors.
The Notes in Instagram adapt automatically to the color of your background or the color of the emoji you are using. Whenever you make a note, you can choose an emoji, which Instagram uses to create a gradient or color theme. It also sometimes changes color based on updates to the app or what type of account you have, and thus, make sure that you update the app to view all the options.
