I learned this the hard way. Imported 500+ business leads from a CSV and didn't check the mapping. Every single "Company" field ended up in the "Notes" section. Had to delete everything and start over.
 
The main issue is that CSV is basically the "Wild West" of data. One person uses "Cell" and another uses "Mobile_Number". VCF is a strict standard. If you don't map them, the importer just gives up and leaves the fields blank.
